THE PRODUCE.

Max ad Delilah, Produce of Daylesford is all about supplying you with the freshest product possible. Our products are made to order only, meaning that everything you receive is as fresh as if you were to make it yourself (excluding relishes and preserves) All our produce is handcrafted and we choose not to use preservatives, so we ensure your produce is as fresh as it can possibly be by enforcing a strict made to order policy.

Our kitchen operates Tuesday – Thursday and your products will be delivered to you by Friday. Shelf life is 14 – 16 day (meat products only). However, our belief is weekly orders will supply you with and maintain a kitchen fresh product for your customers to enjoy.

The team at Max and Delilah have over 40 years’ hospitality experience in the kitchen and front of house and strive to deliver you the same service that any customer would enjoy.

 

DUCK TERRINE

100% Duck meat, salted, confit, mixed with waxy kipfler potatoes, parsley & shallots. Set with pure duck fat.

 

HAM HOCK TERRINE

Beautiful ham hocks from our friends at istra smallgoods, fresh parsley, shallots, set in its natural gelatine of the beast.

 

BEEF TERRINE

Local free range silverside corned & shredded, mixed with house made cornichon then set in its own juices with a small amount of chicken fat.

 

PORK OR CHICKEN RILLETTES

Our rillettes are made using tried and true techniques – Salting, confiting, shredding. Slowly cooking meat until it falls apart under its own weight. Flaked apart by hand, and then folded back with the fat in which it was cooked. One of the oldest forms of preservation.

 

PATE

Chicken liver pate is always a favourite. We marinate our livers in port for over 6 hours. Quickly pan fry with onion, garlic and sage then immediately potted. Sealed with ghee, its air tight and ready to be cracked for your enjoyment.
